A large, thick-walled sweet frying/roasting pepper (C. annuum) from North Macedonia, where it is the primary ingredient in ajvar — the beloved Balkan roasted red pepper relish. "Ajvarski" literally means "the ajvar pepper." Large, elongated pods with thick, juicy walls ripening from green to deep red. Essentially heatless (0–500 SHU) with a rich, sweet, slightly smoky flavor when roasted. Protected as a traditional Macedonian cultural food ingredient. Also excellent fresh or pickled.
