A yellow-ripening variant of the Venezuelan/Caribbean sweet Ají Dulce (C. chinense). "Amarillo" indicates yellow mature color. Same heatless/near-zero capsaicin profile as the base Aji Dulce (0–1,000 SHU), with habanero-style aroma, fruity tropical flavor, and no heat. Used in sofrito and Caribbean seasoning. Not the same as Aji Amarillo (C. baccatum from Peru, which is hot).
