A C. baccatum with an unmistakable bishop's mitre shape — three-lobed pods with wings that flare out. Also called Christmas Bell in some markets. Originally from Barbados and the Caribbean. The heat concentrates in the center while the wings are mild, so you can bite the wings for flavor and avoid the core for heat. SHU 5,000–15,000. A sweet selection (Bishop's Crown Sweet) also exists with near-zero heat. Carries moderate heat.
