Chipotle
Chipotle is a smoke-dried ripe (red) Jalapeño. Slow smoking concentrates the pod into a leathery, wrinkled brown chile with a deep, savoury, smoky heat. Two main types: morita (smoked less, softer and fruitier, reddish-brown — the common supermarket type) and meco (smoked about twice as long, tan-grey, drier, more intensely smoky). Heat runs the jalapeño band, roughly 2,500–8,000 SHU (PepperScale). The shorter-smoked, reddish-brown Morita type is the common supermarket chipotle.
