Peru's national pepper. A C. baccatum var. pendulum that ripens to deep orange (amarillo means yellow, but it's really orange). Fundamental to Peruvian cuisine — it's in everything from papa a la huancaína to aji de gallina. Medium heat around 30,000–50,000 SHU. The dried form is called Aji Mirasol. Peru produces tens of thousands of tons annually. Small-podded selection.
