Chile Seco del Norte is the dried red form of the Anaheim / New Mexico chile, the everyday mild dried chile of northern Mexico (Sonora, Chihuahua) and the US Southwest. The long pods dry to a deep brick-red, leathery skin with a mild, sweet, earthy flavour, and form the base of chile colorado and red enchilada sauces. Roughly 500–2,500 SHU. Note: "chile seco" on its own is a generic term for any dried chile; this entry is specifically the northern dried-Anaheim type. In other regions "chile seco" may instead mean dried serrano.
