Named for the municipality of Padrón in Galicia, Spain. Famous for the Spanish tapas tradition of blistering the peppers in olive oil and finishing with coarse salt (pimientos de Padrón). The saying goes: 'some are hot, some are not' — about 1 in 10 will surprise you with actual heat. Grown in Galicia since at least the 17th century, brought from New World missions.
