Mulato is the dried form of a fully ripe, brown Poblano — the same lineage as Ancho, but picked later, past red into brown, before drying. It is darker (blackish-brown), sweeter and deeper in flavour — chocolate, licorice and tobacco notes — and runs modestly hotter than ancho. The third-with-ancho-and-pasilla member of the classic mole trinity. Roughly 2,500–3,000 SHU (PepperScale).
