Purple pods get their color from anthocyanin, the pigment in red cabbage, laid down in the skin while the fruit is immature. Most purple peppers ripen on through to red or brown; a few, bred to hold the pigment, stay dark. Sun deepens the color, and shaded pods on the same plant can stay green.
